The Ancient Science of Roasted oleaster powder
In Persian cooking, soveiq means gently toasting a food before milling it, which softens its raw taste and gives it a pleasant aroma. Our roasted oleaster powder (Elaeagnus angustifolia, known in Iran as senjed, also called Russian olive) takes this philosophy to heart by incorporating the entire fruit.
Some oleaster powders are made from the pulp only. Persian soveiq sanjed flour is milled with the hard pit as well, because the pit is where much of the fruit's calcium and phosphorus is found. The powder is light beige with tiny darker specks of milled pit, and smells of toasted flour with a faint dried-fruit sweetness.

How to use roasted oleaster powder
Traditional senjed meal is easy to add to everyday food:
- Warm milk and honey: Whisk 1 to 2 tablespoons of oleaster powder with pit into a mug of warm milk. Sweeten with a spoonful of Persian wildflower honey and a sprinkle of True Ceylon cinnamon sticks for a warm drink at breakfast or before bed.
- Breakfast Porridge and Oatmeal: Stir a tablespoon of roasted oleaster powder directly into simmering rolled oats or chia seed pudding for a warm, nutty flavor.
- Date balls: Blend the flour with mashed soft dates and a little cinnamon for a filling snack.
Because roasted oleaster powder contains natural tannins and fiber, eating it often without liquid can cause constipation, so always take it with plenty of warm milk or other liquids.

Why is the oleaster pit milled too?
Much of the fruit's calcium and other minerals is found in the hard pit, so milling the pit together with the pulp keeps them in the powder. You can see tiny darker specks of milled pit in genuine soveiq.
